I have always loved loaded baked potatoes and loaded mashed potatoes, though. Everything is better with bacon, butter, and cheese, right?
This recipe mimics a loaded baked potato. It has bacon, onion, sour cream, and TONS of cheese. It pairs well with any meat, but we like eating it as a side to steak for a treat. It would even be good as a meal on its own!
Here is the recipe:
Loaded Cauliflower Bake
Ingredients

- 24 oz Cauliflower Florets (roughly 3 lb head)
- 5 slice of Bacon
- 2 oz Onion, diced
- 8 oz Cream Cheese, softened
- 4 oz Sour Cream
- 4 oz Shredded Extra Sharp Cheddar, grated
- 4 oz Shredded Pepper Jack, grated
- 1 tsp Garlic, minced
- Salt and Pepper to taste
Directions
Preheat oven to 425. Dice bacon and saute in skillet. Once done, remove bacon and set aside, leaving the rendered bacon fat in the pan.
Saute the minced onion in the bacon fat until the onions are slightly translucent.
In a large bowl, combine all ingredients (including bacon fat) except the cauliflower and seasoning. Stir until well combined.
Add in cauliflower, salt and pepper to taste, and mix until the florets are well coated. Transfer to a 13×9 casserole dish. Bake in oven for 25 mins, or until the top is golden brown and the cauliflower is fork-tender.
